I think I got cherry-jacked this morning and it was oh sooo good.  My wonderful cousin Lisa from LA, who introduced me to spicing up my smoothies, challenged me to stop using bananas every darn time I blend one up.  I love the thicker consistency that the bananas create and find that smoothies lacking them are just too darn watery.  Her suggestion?  Coconut milk.  I love Lisa.  She’s always got a solution for you.

So, this morning I finally broke out the can of coconut milk after nearly a month of thinking this move over and proceeded ahead.  Well, I must admit that I did love love love the consistency.  So coconut milk can rival the banana as a thickener in a smoothie successfully.  Yay!!!  Plus it’s a great source of healthy fat.  Without further adieu…

Cherry-Jacked Smoothie

  • 1 cup coconut water
  • 1/4 – 1/2 cup coconut milk (depending on how much you’d like to add)
  • 3/4 cup frozen, pitted cherries
  • 5 or 6 frozen strawberries
  • 2 heaping tbsp ground flax seed
  • 1 serving of Vanilla Chai VEGA hemp seed protein powder
  • 1 tbsp maca powder
  • 4 or 5 dashes of ground ginger
  • Light sprinkling of cayenne (depends on how much of a kick you want)

Blend everything up and enjoy!

This totally kept me satiated for hours!  Thanks once again to Lisa for her creative enthusiasm that gets my brain going.
